Abstract

The malt is a nutritious drink lacking of alcohol, very demanded today due to its elevated nutritive content. In the present work, a simulation of a pilot scale malt production plant (150 L/batch) was carried out, using red CIAP R-132 sorghum as the main raw material. A sensitivity study consisting of 11 experimental runs was carried out, through which the influence of three input variables (malt production capacity per batch, acquisition cost of red sorghum, and sale price of the malt bottle) was evaluated on three important economic indicators: Net Present Value (NPV), Internal Rate of Return (IRR) and Period of Recovery of Investment (PRI). $ 613,000 Cuban pesos (CUP) must be invested to erect the production plant, the unit cost of production reached a value of CUP $ 3.73/bottle, while values of NPV, IRR and PRI of CUP $ 3,661,000, 63.20% and 1.02 years were obtained, respectively, which qualifies the process as economically profitable and feasible from the investor's point of view. The sensitivity study allowed obtaining equations that establish the statistical correlation between the three input variables and the three output variables. The SuperPro Designer® v.8.5 simulator was used to carry out the simulation, and the Statgraphics Centurion XVI® software for the statistical processing of the data.
