Estudio de la estabilidad térmica del aceite de crisálida del gusano de seda bombyx mori linn

En el presente trabajo se utilizaron crisálidas frescas de gusano de seda, estas fueron sometidas a un proceso de sacrificio, secado y extracción. Para comparar la influencia del calentamiento sobre el aceite con y sin antioxidante se adicionó Vitamina E a una porción de la muestra, ambas se sometieron a las mismas temperaturas de calentamiento y se les realizaron los mismos análisis . Se realizaron pruebas físicas: densidad e índice de refracción; y pruebas químicas: índice de peróxidos, acidez, conductividad y perfil de ácidos grasos, realizando el último análisis solo a dos de las temperaturas. Los análisis demostraron que la composición del aceite no varía notablemente haciéndolo apto para su utilización en procesos que involucren el calentamiento del mismo.Downloads
