Perfil cromatográfico de las antocianinas presentes en algunos frutos colombianos

Abstract

Las antocianinas son los principales pigmentos de las flores y los frutos de las plantas. Actualmente esos compuestos son una alternativa para el uso de los colorantes sintéticos alimentos, ya que ademas poseen propiedades antioxidantes.En este trabajo reportamos el perfil químico de las antocianinas de los frutos de la mora, el mortinño y el tomate de árbol, para establecer una metodologia para seleccionar las mejores variedades por el contenido de ellas asi como por su capacidad antioxidante.
